Migration to 3.x which Postgres version to use #60849

https://github.com/apache/airflow - main (future 3.2 ) already uses Postgres 18 - but 3.1 line has never been tested with it. Usually we can answer on "safely running" something - if it passes all our tests, it's generally "as safe as it can be". We usuallly do not encounter any issues with Postgres upgrade (it's very stable) - but if you want to get the confidence level of "passed all tests, then you can definitely follow our contributing guide, add postgres 18 to configuration in breeze and run complete suite of tests - then you will get as good as it can be - confidence, other than that it's your own judgment what level of "safe" is "safe" for you. |

Thanks @potiuk I'd like to test with using the contributing guide in a sandbox but I'm lacking time. |

Currently on 2.10.1, postgres 13
Looking to move to 3.x
https://airflow.apache.org/docs/apache-airflow/stable/howto/set-up-database.html
states using version 13, 14, 15, 16, 17
PostgreSQL 13 is now end-of-life and will no longer receive security and bug fixes
Can I safely use Postgres 18 even though it is not listed above?
